The Banana Bread to Isha's Heart

Ingredients:

3 to 4 ripe bananas

1/4 cup melted butter

1 cup sugar

1 1/2 cups flour

1/4 teaspoon salt

1 egg, beaten

1 teaspoon baking soda

1 overflowing teaspoon vanilla extract

Chocolate chips (If you want...and as many as you want! Sometimes I make chocolate ganache and spread it on top.)

Preparation:

Step 1

Preheat oven to 350°F. Mash the bananas in a bowl.

Step 2

Add all the remaining ingredients and mix well with a wooden spoon.

Step 3

Preheat oven to 400°F. Season the eggplant with a little more salt and pepper, then arrange on two parchment-lined baking sheets. Cover tightly with foil and bake until eggplant is tender and pliable but NOT fully cooked, about 8 to 10 minutes.

Step 4

Bake in a buttered loaf pan (or 9x9 baking dish) until a toothpick stuck into the bread comes out clean, ~ 55 minutes.

Step 5

Slice and serve.
